Healthy and yummy yoghurt drink with cumin and ginger not only enhance the flavor but also acts as digestive agents. Yoghurt is also a source of protein and other vitamins. The drink itself is very nutritious, filling and do a great paring with lentil salad /black gram salad .It can be prepared and be stored for few days.Pour and enjoy when ever you are hungry or thirsty

 

Ingredients:

  • 1 cup Yoghurt (regular or greek)
  • 1/2 cup water
  • 1 tsp ginger grated
  • 1 tsp cumin
  • 1 tsp black salt
  • 1 tsp black pepper
  • salt to taste
  • few drop of oil

Method:

  1. Heat the small pan and roast cumin seeds.
  2. Using a mortar and petal coarsely crush them and keep aside.
  3. Again add few drops of oil in pan and put ginger saute it for a min.
  4. Pour yoghurt in a pot add water, roasted cumin, sautéed ginger, black salt, salt, black pepper and blend them using a whisk or blender.
  5. Pour the content in a large cup add ice as per preference.

Corn paneer/tofu flavored with sun-dried tomatoes (protein rich vegetarian/vegan dish)

This is a great snack or light dinner. It has very few ingredients and takes about 5 min to be ready. I came up with recipe when i was really wondering what should i eat that has low carb and still filling. The Tofu/Paneer is high in protein and helps fill you up .Sun -dried tomatoes add a nice flavor to whole thing.Do try

Ingredients:

  • 1 cup sweet Corn
  • 1/2 cup Paneer/Tofu in small cubes
  • 1/4 sun-dried tomatoes
  • Regular Salt/Garlic salt to taste
  • 1 tsp black pepper
  • Cilantro to garnish.
  • 1 tsp lemon juice(optional)
  • 1 green chilli minced(optional for spicier version)

Method:

  1. Put Corn in microwavable bowl and cook for 2 min.
  2. Drain water and keep aside.
  3. Heat a pan and add sun-dried tomatoes to it.
  4.  Once the olive oil from tomato heat up add chilli, corn and panner/Tofu.
  5. Stir fry on high heat for 2 minutes.
  6. Add salt and pepper.
  7. Garnish with Cilantro and squeeze of lemon.

Vermicelli

In English, the Italian loanword “vermicelli” is used to indicate different sorts of long pasta shapes from different parts of the world but mostly from South or East Asia. Vermicelli can be used in various dishes like making pudding or cutlets out of it.Here is a simple recipe of vermicelli with vegetables Hope you will enjoy this healthy and tasty recipe.

Ingredients:

  • 1 cup vermicelli
  • 1/4 cup french beans, carrot diced, bell pepper
  • 1/2 cup onion chopped
  • 1 chilli finely chopped
  • 1 tbsp oil
  • 1/2 tsp Mustard seeds
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1 tbsp lemon juice
  • 1/4 cup cilantro finely chopped
  • Water
  • salt
  • Peanuts (optional)

Method:

  1. Boil 3 cup of water in a pot then add vermicelli cover the lid and turn off the heat.
  2. Let it stand for 5 min then strain excess water using strainer.Vermicelli gets cooked quickly.
  3. In another pan heat oil and add mustard seed let them splutter and add turmeric and red chilli powder
  4. Add onion & green chilli, once onion turn brown add carrots, beans.
  5. Finely add capicum and cook for 2 minutes.
  6. Then add boiled vermicelli, lemon juice & salt. Mix them together.
  7. If you want to add peanuts, roast them in little oil and add now.
  8. Garnish with cilantro and enjoy hot with your favorite cup of tea 🙂
